Asian Chicken Salad
1 cup cooked chicken, cut into small pieces
1/2 cup bean sprouts (optional)
1/4 cup chopped water chestnuts
1 green onion, thinly sliced on the diagonal
Dressing:
4 teaspoons soy sauce
1 tablespoon white wine vinegar
1/2 teaspoon sesame oil
1/8 teaspoon pepper
lettuce leaves
2 large tomatoes, cut into wedges
Combine chicken, bean sprouts, water chestnuts and green onion in a bowl. In another small bow, mix together all of the dressing ingredients. Pour over the chicken and toss well. Cover and chill, stirring occasionally if you can.
To serve, place lettuce leaves on the bottom of individual salad plates or one larger salad plate. Place tomato wedges around the edge of the plate and fill the center with the chicken salad.
